I've found this site that I LOVE called Hungry Girl. I get an email everyday that chockful of recipes, food reviews, and more. I LOVE it. It's one of the few emails I look forward to receiving each day. The next two recipes came from one of those emails. I love them because they are SUPER EASY with only two ingredients each...
**Egg Beaters + Laughing Cow (2 pts.)
This is so simple...Take your favorite mug and spray with cooking spray. Add in 1/2 cup of Egg Beaters (though I use Better'n Eggs cause it's cheaper). Crumble up one Laughing Cow Light Swiss Cheese wedge. Cover the mug and microwave for a minute. Stir it up, then microwave for another 30-45 seconds. Or until the eggs are just set....
**Pillsbury Crescent Recipe Creations Dough + Meatless Breakfast (3pts.)
Preheat your oven to 350 degrees.
Roll out the entire package of dough so you have a big rectangle.
Scatter 6 oz. crumbled meatless sausage on top. (I used the Morningstar crumbles)
Roll it up into a log, and cut it into eight little breakfast biscuits with a serrated knife.
Place on a baking sheet that's been sprayed with cooking spray.
Bake them in the oven for about 15 minutes.
(Tip: we added a sprinkling of 2% mozzarella cheese...Yum!)

Cheese Soup
This is a recipe that a coworker gave me a long time ago. She received it at a WW meeting, and one huge serving is one 1 point!
3 cans of chicken broth
1 can mild rotel
2-3 lbs frozen California style veggies (or I like to experiment with all kinds of different frozen veggies)
10 oz. light Velveeta cheese
Cook veggies in rotel and broth until tender. Add cheese to the broth and rotel. Cook until cheese melts.
1 cup=1 point
Easy, easy, easy! My whole family loves it!

Slow Cooker Salsa Chicken
4 boneless skinless chicken breasts
1 cup salsa
1 pkg taco seasoning
1 can reduced fat cream of mushroom soup (condensed)
1/2 cup fat free sour cream
Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.
Serve with rice.
Serves 6 or more.
Cal- 157.2
Fat- 3.3 g
Protein- 24.3 g
Carb- 6.7 g

This was a hit with EVERYONE, even Ethan! We mixed the rice in with the chicken and served this with tortillas and chips and salsa...
